Pea microgreens have been found to aid in anemia, cancer prevention, and overall heart health. They are high in antioxidants and phytonutrients which are necessary in supporting the body’s inflammation system.
These contain beta-carotene, a nutrient converted into vitamin A in the body to protect against vision loss and improve skin complexion. The greens also contain vitamin C to strengthen the immune system and lower amounts of calcium, vitamin B, and iron. My personal favorite to snack on and stir fry!
